Directions

  1. Preheat oven to 375 degrees. Heat basting oil in pan on MED-HIGH. Add onions; cook, stirring, about 5 min, until browned. Add spinach; season with salt and pepper. Cook, stirring, about 3 min, until spinach is wilted; remove from heat. Set aside.
     
  2. Add eggs, heavy cream, milk, 1/2 tsp salt, and 1/4 tsp pepper to large bowl; whisk until combined. 
     
  3. Cover bottom of each pre-baked pie shell with 1/2 cup cheese. Portion onion-spinach mixture evenly over cheese; layer each with remaining cheese. Slowly pour half of egg mixture over each filled pie shell. Place quiches on center rack of oven. Bake 35-40 min or until knife inserted near center comes out clean.
