  1. Whisk eggs, dill, salt, and pepper in bowl. Set aside.
     
  2. Add matzo to large bowl. Pour boiling water over top of matzo. Immediately drain in colander; return matzo to bowl. Pour egg mixture over matzo; toss together.
     
  3. Heat olive oil in large nonstick skillet on MED-HIGH. Spread egg-matzo mixture in skillet. Shake occasionally, loosening edges with rubber spatula. Cook until eggs are mostly set, except in very center. Carefully slide omelet onto pan lid or plate; flip. Slide omelet back into skillet.
     
  4. Remove from heat. Let rest 3-4 min. Transfer to serving platter; cut into 4 wedges.
     
  5. Top each wedge equally with salmon. Garnish with dill sprigs, if desired.
