  1. Wash rice, rinsing 3-4 times under cold tap water until water runs clear.
  2. Combine rice, chicken broth, and water in large (1 1/2-2 qt) stockpot. Cover, bring to simmer on MED. Reduce heat to LOW; simmer, stirring occasionally, 30 min. (Mixture should be soupy, not thick like oatmeal. If too thick, thin with some water.)
  3. Fold diced bacon gently into rice. Cover; cook 30 min on LOW. Remove from heat, season with salt, pepper, and soy sauce. Set aside.
  4. Cook remaining 4 bacon strips in small fry pan on MED-HIGH 3-5 min, until crispy. Remove from pan; drain on paper towel. Crumble into bits when cool.
  5. Garnish rice porridge with green onions, peanuts, bacon bits, and ginger.
