  1. Trim leek roots and dark green ends; discard. Slice each leek in half lengthwise; cut crosswise into 1-inch pieces. Add to bowl of cold water; stir leeks to loosen any dirt. Remove with slotted spoon; drain.
      
  2. Heat 1 Tbsp oil in skillet on MED. Add leeks and garlic; cover. Cook, stirring occasionally, 3-5 min. Remove from pan; set aside. Heat remaining 2 Tbsp oil in skillet. Add potatoes and peppers, cover. Cook, stirring occasionally, about 10 min, until tender. Return leeks to skillet; stir to combine. 
       
  3. Pour eggs into skillet; season with salt and pepper. Cook, stirring occasionally, about 3 min, until eggs begin to set. Cook, 1-2 min, until eggs are firm.
