Directions

  1. Preheat oven to 375 degrees. Butter 12-cup muffin pan; dust with flour.
     
  2. Lightly beat together eggs, buttermilk, and oil in large bowl.
     
  3. Combine flour, sugar, and baking soda; stir in chopped plums and chopped pecans. Add to liquid; fold together just until dry ingredients are moistened. Do not over-mix.
     
  4. Spoon about 1/3 cup batter into each muffin cup or ramekin; top each with pecan half. Bake 30 to 35 min, or until muffins spring back when touched near center.
Chef Tips
If preparing with mixer, use paddle attachment so less air is worked into the batter and to avoid damage to the whip attachment.
 
Options
  • Garnish with rolled oats or granola and pecan halves.
     
  • Delicious served with butter or lavender honey.
