Egg in a Veggie Noodle Nest

6 (6 oz) ramekins

Directions

  1. Preheat oven to 425 degrees. Heat basting oil in sauté pan on MED-HIGH. Add garlic; cook 1-2 min.
     
  2. Add mini peppers and green peppers; cook, stirring, 1-2 min. Add sweet potato noodles; reduce heat to MED. Cook, stirring, about 3 min. Season with salt and pepper. Remove pan from heat; set aside. Let rest about 5 min.
     
  3. Place 6 (6 oz each) ramekins on baking sheet; spray ramekins generously with cooking spray. Divide noodle mixture evenly among ramekins, forming a hollow in center of each. Crack 1 egg into each hollow.
     
  4. Bake on center rack of oven 10 min. Remove baking sheet from oven; cover ramekins with foil. Return to oven; bake 8 min. Loosen nests from ramekins with fork; transfer carefully onto serving platter.
Chef Tips
For firmer egg, continue baking 1-2 min.
