  1. Preheat oven to 300 degrees. Spray nonstick skillet with cooking spray; heat on MED-HIGH. Reduce to MED; add eggs and spinach; cooking until eggs are firm, tilting pan gently to cook all of egg, 4-5 min (spinach will wilt slightly). Remove pan from heat; set aside.
     
  2. Melt margarine in another nonstick skillet on MED. Place 1 tortilla in pan, top with 1 Tbsp cheese, then 1/2 egg mixture and then 1 Tbsp cheese.
     
  3. Spray one side of second tortilla, placing it sprayed-side up onto tortilla in pan. Flip entire tortilla over; cook one minute or until golden brown. Remove from pan; keep warm in oven. Repeat process to make another tortilla.
     
  4. Cut tortillas into quarters; serve each with 1/4 cup salsa.
