Directions

  1. Preheat oven to 375 degrees. Spray 8x8x2-inch casserole dish with cooking spray. Sprinkle with a little sugar.
     
  2. Beat egg whites with electric mixer in clean medium bowl until frothy, about 30 seconds. Gradually add 6 Tbsp sugar, continuing to beat as sugar is added, 2-3 min, until soft peaks form.
     
  3. Beat egg yolks and vanilla with a fork in separate medium bowl just until blended.
     
  4. Fold egg yolk mixture slowly and gently into egg whites until incorporated. Gradually sprinkle with flour, gently folding in after each addition, until all flour is mixed in.
     
  5. Pour into prepared dish. Bake, 18-20 min, until golden brown and puffed. Sprinkle with powdered sugar.
     
  6. While souffle is baking, blend yogurt and fruit spread in small bowl to make yogurt sauce. Serve souffle immediately with yogurt sauce.
