  1. Preheat oven to 400 degrees. Hollow out about half of each zucchini slice with melon-baller (leave the bottom intact). Bake on parchment paper-lined baking sheet 5-7 min until color is vibrant. Remove from oven. Brush with basting oil; season with salt and pepper.
     
  2. Dollop about 1 tsp pizza sauce in zucchini center of half the batch; sprinkle with cheese and garnish with pepperoni. For other half batch, place half cillengini in zucchini center; dollop with 1/2 tsp pesto and garnish with pine nuts.  Return to oven; bake 5-7 min. Serve hot.

This can be prepared the morning of serving, but no sooner.

Fill zucchini wedges with your choice of fillings: 
Tomato sauce dollop, cheese sprinkle, crumbled sausage garnish 
Cillengini half; top with roasted tomatoes (Mediterranean Bar)
