Safety (metal mesh) gloves, clam knife, large baking sheet

Directions

  1. Add basting oil, peppers and onions and garlic to large skillet on MED-LOW. Cook 10 min, until soft but not browned. Add bacon; cook 2 min. Add wine and clam juice, cook 3 min.  
     
  2. Reduce heat to LOW. Stir in butter until melted. Stir in bread crumbs. Set aside.
     
  3. Rinse clams. Carefully split open using safety gloves and clam knife. Transfer clam meat to one side of shell, discard other shell half. Place meat-filled shells on baking sheet; top each with about 2 Tbsp stuffing mixture.
     
  4. Preheat grill on MED-HIGH 10 min. Cook on grill; lid closed, 8-9 min, until internal temp reaches 165 degrees and filling is slightly brown and crispy.
Chef Tips
This can be baked in 450 degree oven 8-9 min.
