Directions

  1. Make marinade: Add sauce, cilantro, and lime juice to large bowl; stir to combine. Set aside.
     
  2. Add scallops to large pot of boiling, salted water. Cook, 3-4 min, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of scallop). Drain; add to marinade. Add shrimp to boiling, salted water; cook, 1-2 min until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of shrimp). Drain; add to marinade. Season with salt; toss to combine. Chill 1-2 hours.
     
  3. Add 1 shrimp, 1 pepper slice, 1 cucumber slice, and 1 scallop to each of twelve 6-inch bamboo skewers. Arrange on serving platter; drizzle with remaining marinade.
