6 martini or margarita style glasses

Directions

  1. Combine seafood stock, wine, 2 tsp basting oil, and sea salt in medium saucepan; heat to simmering on MEDIUM. Add calamari; remove pan from heat and let stand 30 seconds. Immediately remove calamari from liquid and combine with crab in mixing bowl.
     
  2. Add citrus soy sauce, chives, and remaining 1 tsp basting oil; mix lightly.
     
  3. Set aside 6 radicchio leaves. Cut remaining radicchio into thin strips. Line each glass with 1 uncut radicchio leaf. Top with radicchio strips, then with calamari-crab mixture. Garnish each serving with 1 shrimp and sprinkling of chives.
Chef Tips
  • To easily cut radicchio, stack leaves, then roll into tube-shape. Slice in thin strips.
  • Garnish with additional minced chives.
