Savory Palmiers with Olive Tapenade

Directions

  1. Lay rolled puff pastry flat on parchment paper. Using a small spatula, evenly spread tapenade over pastry to edges. Mark an approximate lengthwise center guideline by drawing a light line with spatula edge.
     
  2. Beginning at long side, roll pastry, jelly-roll style, to center line. Repeat with other long side so that both sides meet at the center line.
     
  3. Chill, covered, at least 4 hours (preferably overnight).
     
  4. Preheat oven to 400 degrees. Slice pastry in 1/4-inch sections. Transfer pastries to prepared baking sheet (parchment paper or nonstick cooking spray); arrange about 1- inch apart. Bake 18-20 min or until golden brown. Transfer palmiers to cooling rack.

  • Always start with a cold pastry. This is very important for rise in cooking. 
     
  • Slice with a sharp knife.
