Directions

  1. Preheat oven to 400 degrees. Add cornbread mix, oil, eggs, and milk to large bowl. Whisk until well combined. Stir chives into batter.  
      
  2. Coat bottom of pans with nonstick spray. Dollop about 2 tsp batter into muffin tins (about 1/2 full). Add 2 cubes of cheese and 4-5 pepperoni quarters to each; top with about 2 tsp batter to fill 3/4 full.
     
  3. Bake about 10 min until muffins are set.

Get creative with your flavor combinations: There are tons of great fillings to choose, such as a chopped olive mix (Mediterranean Bar) with roasted tomatoes (Mediterranean Bar), Wegmans Andouille Pork Sausage with cheddar or baked Virginia ham (Deli) and cheddar.
