Directions

  1. Preheat oven to 400 degrees. Cut small slice from bottom of each potato to lay flat. Scoop out inside of each potato half with small melon baller; discard potato flesh.
     
  2. Place potatoes in braising pan with enough salted water to cover; cook on MED-HIGH, about 15 min, until fork-tender. Carefully remove from water with slotted spoon; drain on paper towel. Let cool; season with salt.
     
  3. Arrange potatoes cup-side up on parchment paper-lined baking sheet. Fill each with 1/2 tsp gorgonzola; top with 1 pecan. Bake 5-7 min.
     
  4. Garnish with chopped chives; drizzle with truffle honey.
Chef Tips
Potato halves can be prepped one day ahead and finished the day of serving.
