Directions

  1. Preheat oven to 350 degrees. Create filling: toast pine nuts in dry saute pan on MED until lightly browned, stirring occasionally. Let cool; chop.
     
  2. Mix apple, salami, chives, and pine nuts with olive oil. Season to taste with fresh ground pepper. Set aside.
     
  3. Create cheese cups: Spread 1 Tbsp cheese into 2 1/2-inch circle on silpat-covered (SiliconeZone) baking sheet. Repeat with all of cheese, leaving 2 inches between circles. Bake 8-9 min until browned. Remove from oven; let rest about 1 min. Working quickly, while still pliable, carefully remove cheese circles with narrow spatula and lay over inverted small (1-inch) cups. Let cool 5 min to form lacy cups.
     
  4. Spoon apple mixture into cups immediately before serving or allow guests to fill the cups themselves.
Chef Tips
Cheese cups may be made a day ahead and stored at room temperature in an airtight container. Fill cups just before serving.
