Directions

  1. Preheat oven to 450 degrees. Add walnuts to pan on MED-HIGH; cook, 1-2 min, until lightly browned. Reduce heat to MED. Add mushrooms and spinach; cook, stirring, about 3 min, until spinach wilts. Add demi-glace; stir to combine. Remove from heat; let cool about 5 min. Add cheese; stir to combine. Set aside.
     
  2. Carefully unroll dough sheets; remove 4 sheets of phyllo. Cover remaining rolls with plastic wrap and damp paper towel. Place 2 sheets on flat, dry work surface. Brush top sheet with melted butter. Place remaining 2 sheets on buttered sheet, lightly press down. Brush top sheet with melted butter. Slice phyllo layers lengthwise into 4 long strips using sharp knife or pizza cutter. 
       
  3. Place about 1 Tbsp mushroom-spinach mixture on one end of each phyllo piece. Carefully fold over phyllo end with stuffing, forming a triangle. Continue folding in triangle shape about 4 times; leaving 1/2-inch of phyllo. Brush outside of phyllo with butter; press loose end onto butter to seal triangle.
     
  4. Repeat steps 2 and 3 seven times. Place triangles on parchment-lined baking sheet. Brush tops with melted butter. Bake 12-13 min, turning pan halfway through. Remove from oven; let cool before serving.
