  1. Heat 1 Tbsp oil in large skillet on MED-HIGH. Add onions and mushrooms; cook, stirring occasionally, 10-12 min. Season with salt and pepper. Remove from heat; let cool to room temp.
     
  2. Spread about 2 tablespoons chevre on half of each tortilla. Top with about 1/2 cup mushrooms; sprinkle with 1 Tbsp shredded cheese. Fold tortilla over filling.
     
  3. Heat remaining oil in skillet on MED, until oil faintly smokes. Add 2 folded tortillas to skillet; cook 1-2 min per side, until browned. Transfer to serving plates. Repeat with remaining tortillas.  
     
  4. Cut each quesadilla into quarters.

 

 

Chef Tips
  • Mushrooms can be made the day before.
  • You can also grill these quesadillas. Lightly coat grill grate with vegetable oil. Grill on MED-HIGH, about 2-3 min per side, or until cheese is melted.
  • Try garnishing these with Wegmans Organic Salsa Verde Sauce.
