Directions

  1. Heat 2 Tbsp of olive oil in large frying pan on MED; add onions and mushrooms. Sprinkle with salt and pepper. Fry, stirring, about 30 min, until mixture is dark brown and dry. Set aside.
     
  2. Pulse almonds in food processor until they form a coarse meal. Transfer to bowl; set aside.
     
  3. Add 1/4 cup olive oil, soy sauce, lemon juice, garlic, oregano, and thyme to food processor; blend until smooth. Add to almonds in the bowl; stir in mushroom mixture.
     
  4. Allow to cool, then taste for seasoning. Serve cold.
