Directions

  1. Combine Gruyere, Emmentaler, and cornstarch in medium bowl.
     
  2. Rub heavy saucepan with garlic. Add wine, lemon juice, kirschwasser, and cheese mixture to pan. Heat on MED-LOW, slowly stirring, until mixture is smooth and creamy. 
      
  3. Transfer to fondue pot. If mixture is too thick, add more liquid while heating to thin.
Chef Tips
  • For a traditional flavor, leave garlic in pan after rubbing sides of pan.
  • Try adding pesto, truffle paste, or blue cheese crumbles for additional seasoning.
  • Accompaniment suggestions include: fresh bread, mini salamis, Mortadella, mushrooms, baby carrots, cherry tomatoes, steamed broccoli and cauliflower florets, cooked shrimp and lump crab meat.
  • Be sure to stir fondue each time you dunk accompaniments to keep cheese from separating.
