Grilled Mojo Lime Shrimp

Ingredients

6-inch bamboo skewers, soaked

Directions

  1. Mix marinade, lime juice, and lime zest together in small bowl; set aside. 
     
  2. Arrange two shrimp on each skewer; place in small casserole dish. Coat shrimp with marinade; cover. Refrigerate at least 30 min.
     
  3. Preheat grill on MED. Coat cleaned grill grate lightly with vegetable oil. Sear shrimp in single layer on grill 2-3 min. Turn over; sear 2-4 min, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of shrimp). 
Chef Tips
For added flavor, try adding 2 Tbsp tequila to the marinade.
