Grilled Corn & Hatch Chile Flan

Ingredients

8 ramekin dishes (3 1/2 inch), hand mixer

Directions

  1. Preheat grill to MED-HIGH. Preheat oven to 350 degrees. Drizzle corn with basting oil. Place on grill; cook, 10 min. Transfer to large bowl; cover bowl with plastic wrap. Let rest 10 min. Cut kernels off cob. 
     
  2. Spray ramekins with cooking spray. Cut kernels off cob. Spoon about 2 Tbsp of corn into each ramekin, portioning evenly.
     
  3. Add heavy cream and eggs in separate bowl; stir to combine. Add Hatch chiles; season with salt and pepper. Blend with hand mixer until smooth. Fill ramekins evenly with mixture; place on baking sheet.
     
  4. Place in oven; bake, 35 min, until tops are lightly browned and puffed. Knife inserted 1 inch from edge should come out clean. Serve in ramekins or let cool 10 min to unmold.
