Deep fryer or deep stockpot and candy thermometer

Directions

  1. Place crab and cream cheese in mixing bowl; mix until well-combined. Add green onions and cilantro; mix to combine. Season with salt and white pepper.
     
  2. Lay 5 egg roll wraps on clean work surface. Halve, then halve again to get 4-inch squares. (Place a damp paper towel over cut wraps as you work.) Place 2 tsp of crab filling in center of each wrapper.
     
  3. Dip fingertips into water; wet center point of each edge and gather these points over filling. Pinch edges together over center, forming an X or flower shape. 
     
  4. Heat oil in deep fryer (or stockpot) to 350 degrees. 
     
  5. Cook 2-3 min, until rangoons begin to turn golden brown. Scoop each from pot as it browns; drain on paper towels. Serve with sauce.
