  1. Add water, wine, vinegar, onions, celery, carrots, lemon, bay leaves, Old Bay seasoning, and salt to large stock pot. Bring to boil on MED-HIGH. Reduce heat to MED-LOW; simmer 30 min. 
     
  2. Add shrimp; return to boil. Cook 4-5 min until internal temp of shrimp reaches 130 degrees (check by inserting thermometer halfway into thickest part of shrimp); drain. 
     
  3. Transfer shrimp to baking sheet in singer layer; chill 30 min. Peel shrimp; serve with sauce.
