Preheat oven to 350 degrees.

  1. Slice off about one quarter of each profiterole top to create "cup;" reserve top. (Press interior of "cup" if you need more filling area.) 
  2. Place 2 pieces of tomato, then one mozzarella ball into each profiterole. Place on baking sheet and bake on center rack 5-7 min, until cheese begins to melt.
  3. Remove from oven. Replace tops to make sandwiches.
