Directions

  1. Fill bowl with water and lemon slices. Trim the tops and bottoms of artichokes with knife.  Remove outer layer of tough leaves and discard. Quarter artichokes; rub cut surfaces with lemon half. Place artichokes in water.
     
  2. Heat 1/2 cup oil on MED in braising pan. Add carrots, leeks and garlic. Cook, stirring, 5 min. Season with salt and pepper.
     
  3. Drain artichokes (reserving lemon slices); top veggies with artichokes. Add wine and broth. Squeeze juice from reserved lemon slices over artichokes. Cover and simmer on MED-LOW 20- 25 min, or until artichoke bases are knife-tip tender. 
     
  4. While artichokes simmer: Brush baguette with remaining 2 Tbsp oil; toast baguette under broiler, watching carefully not to burn. Set aside.
     
  5. Transfer artichokes to a plate; set aside. Continue simmering veggie mixture, uncovered, until liquid is reduced by 3/4. Remove pan from heat; cool to room temp, about 30 min.
     
  6. Crumble goat cheese on vegetable mixture; fold in gently. Add chopped olives.
     
  7. Place 2 artichoke quarters on each baguette slice; top with 1/2 tablespoon vegetable-goat cheese mixture and serve.
