Timetable


One week ahead

  • Pick up wine and tenderloin.
  • Shop for non-perishable items.
  • Order shrimp tray.

Day before

  • Pick up recipe ingredients, shrimp tray, and dessert.
  • Make Cider-Glazed Carrots per recipe; cover and chill.
  • Roast mushrooms for risotto (Mushroom Risotto, step 2); cover and chill.

Morning of party

  • Set table.

2 hours, 10 min before dinner

  • Preheat oven to 450 degrees.
  • Prep tenderloin per recipe.

2 hours before dinner

  • Place tenderloin in oven.

1 hour, 45 min before dinner

  • Reduce heat to 350 degrees.

1 hour before dinner

  • Complete risotto recipe from step 3.
  • Cover and keep warm.

30 min before dinner

  • Check roast for internal temp.
    When meat is done, transfer to carving platter; let rest 10-20 min before carving.
  • Make red wine sauce per recipe;
    keep warm.
  • Open wine.

15 min before dinner

  • Set out shrimp tray.
  • Warm carrots and transfer to
    serving dish.
  • Slice roast and arrange on
    serving platter.
